Epoisses noun: A very stinky washed-rind cheese.
This is one of my favorite foods in the entire world. If you're a brave cheese lover, take a trip to your local cheesemonger and pick one up. It runs about $21, but it's worth every penny I promise. Also, don't be put off by the smell, there's nothing wrong with it.
First, take it out of its unassuming wooden box and let it come to room temperature. Can you smell it now? Slicing into the cheese releases an extraordinary liquid center. Cut it open and try a small slice at first. Don't be shy, eat the rind as well. Notice the vapors that exit your nostrils when you breathe out. I love that part.
